Stuffed Bell Peppers
Stuffed Bell Pepper Recipe Ingredients
Here’s what you’ll need to make these stuffed bell peppers :
Bell Peppers, of course! Use as many shapes and colors as you can get your hands on! I like to use a variety of bell peppers.
Red onion, Mushrooms – For sharpness and crunch.
Black Beans - For some delicious protein
Brown Rice - the perfect complex carb
Taco seasoning & olive oil – Instead of whisking together a separate dressing for this salad, I save myself a bowl and just drizzle the tomatoes with olive oil and vinegar. The oil adds fruity richness, while the vinegar makes the tomatoes tangy and bright.
Avocado or guacamole - For some healthy fat to add on top!
Ingredients
· 4 bell peppers, cut in half
· Heaping ⅓ cup thinly sliced red onion & mushrooms
· 1 tablespoon extra-virgin olive oil
· 1/2 packet of taco seasoning
· 1 can of black beans & brown rice
· 1 avocado
· Salsa & cheese (optional)
Instructions
1. Preheat the oven to 350 degrees F and coat a pan with baking spray
2. Slice the tops off of bell peppers and remove seeds.
3. Place the peppers cut side down in the baking dish. Add 1 1/2 cups of water to the dish.
4. Cover the dish with foil and bake for 25 minutes.
5. While the peppers are cooking cook the onions, mushrooms in olive oil and taco seasoning until fully cooked.
6. Remove the peppers from the oven and drain off the water. Turn the peppers over and fill each one with mushrooms, onions, black beans and rice.
7. Top with avocado, cheese, salsa or any other toppings you would like
STUFFED BELL PEPPER VARIATIONS
These stuffed peppers are delicious as-is, but you can also customize them to suit your taste.
Meat: You can use sausage, ground turkey or ground beef.
Grains: Try quinoa or orzo instead of rice
Veggies: These peppers are great with other vegetables added to the filling such as diced zucchini, olives or corn.
Cheese: You can use cheese to top the peppers such as cheddar or Monterey Jack.
