Pumpkin Spice Protein Muffins
Pumpkin season is here! This is my favorite time of year because I love anything pumpkin and fall treats are just the best, especially when you can make them healthy! These pumpkin muffins are guaranteed to be your new favorite treat!
INGREDIENTS
1 cup of almond flour
2 ripe bananas
1 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon pupmkin spice
2 large eggs, at room temperature
1/2 cup of pumpkin puree
1 teaspoon pure vanilla extract
1 cup semisweet chocolate chips, divided
INSTRUCTIONS
Preheat your oven to 350°F. Grease a muffin pan with nonstick cooking spray and set aside.
In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and sea salt. Set aside.
In a large bowl, add the eggs, vanilla extract, pumpkin and bananas. Stir until smooth.
Stir the dry ingredients into the wet ingredients. Stir in 1 cup of the chocolate chips.
Pour batter into prepared muffin pan. Bake for 15-20 minutes.
Remove the pan from the oven and set on a wire cooling rack. Let the muffins cool for 15 minutes
