Pumpkin Spice Protein Muffins

Pumpkin season is here! This is my favorite time of year because I love anything pumpkin and fall treats are just the best, especially when you can make them healthy! These pumpkin muffins are guaranteed to be your new favorite treat!

INGREDIENTS

  • 1 cup of almond flour

  • 2 ripe bananas

  • 1 teaspoon baking soda

  • 1/2 teaspoon sea salt

  • 1 teaspoon pupmkin spice

  • 2 large eggs, at room temperature

  • 1/2 cup of pumpkin puree

  • 1 teaspoon pure vanilla extract

  • 1 cup semisweet chocolate chips, divided

INSTRUCTIONS

  1. Preheat your oven to 350°F. Grease a muffin pan with nonstick cooking spray and set aside.

  2. In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and sea salt. Set aside.

  3. In a large bowl, add the eggs, vanilla extract, pumpkin and bananas. Stir until smooth.

  4. Stir the dry ingredients into the wet ingredients. Stir in 1 cup of the chocolate chips.

  5. Pour batter into prepared muffin pan. Bake for 15-20 minutes.

  6. Remove the pan from the oven and set on a wire cooling rack. Let the muffins cool for 15 minutes

  7. Serve and enjoy!
