Pumpkin Protein Bars
PUMPKIN SPICE PROTEIN BARS!
The perfect fall treat or snack that is nutritious & also SO delicious!! 🍂🍁 If you want to keep it a little bit healthier, you can skip the white chocolate on top!
These bars have the perfect amount of pumpkin pie flavor and a good protein to carb ratio. They are great for munching on before or after your workout or as a grab-and-go breakfast bar. I hope you love them as much as I do!
Ingredients
1/2 cup oats
1/2 cup vanilla protein powder
1/3 cup ground flaxseed
1 tsp pumpkin spice
Pinch of sea salt
1/2 cup pumpkin
1/3 cup peanut butter
2 tbsp coconut oil (melted)
3 tbsp honey
Instructions
1) Mix all ingredients together super well so that
they are fully combined
2) Press dough into a pan
3) Top with melted white chocolate (see below)
4) Freeze for at least 1 hr in the freezer
5) Slice into bars & enjoy!!
For the chocolate topping
1/2 cup white chocolate chips + 1 heaping teaspoon of coconut oil
Melt in the microwave
