Banana Oat Pancakes

Here’s what you’ll need to make these banana and oat pancakes :

  • Bananas- Super ripe bananas will help sweeten the pancakes!

  • Oats – You can use regular oats or even oat flour.

  • Milk- Use any milk you would to add some moisture, I usually use unsweetened almond milk

  • Eggs - you will need two eggs for this recipe

  • Pancake Staples - you’ll also need baking powder to allow the pancakes to get nice and fluffy, plus some cinnamon, vanilla & salt for flavor.

  • Optional (Protein Powder) – I used a plant based protein but you can use any protein you would like.

  • Any topping you would like - flaxseeds, chia seeds, nuts, coconut, chocolate chips, hemp seeds, peanut or almond butter, honey

Ingredients

·       2 medium to ripe bananas

·       2 eggs

·      1 1/2 cup of oats

·       1/2 cup of milk

·       1 teaspoon (cinnamon, salt & baking powder)

Any toppings you would like! Pancakes are best with lots of toppings!

Instructions

1.  In a mixing bowl add in smashed bananas, eggs and milk

2. Stir wet ingredients until combined

3. Add in oats, protein powder, cinnamon, salt and making powder

4. Mix until combined

5.  Coat a griddle with coconut oil or olive oil and place over medium heat. Once pan is hot, add 1/3 cup of the batter to the griddle for each pancake and cook for 2-4 minutes until pancakes slightly puff up and you see a few bubbles along the edges.

6. Flip cakes and cook until golden brown on underside. If you find that pancakes are browning too quickly then you need to lower the heat!
7. Add toppings of choice to pancakes and enjoy!
