Simple Chocolate Coconut Banana Cake

This paleo banana cake with a simple dairy free chocolate frosting is so easy to make & has become a a new staple dessert in my house!!

This cake is also just the right amount of sweetness without being overly rich. It’s naturally sweetened with maple syrup and bananas, and the frosting is sweetened with a little bit of coconut sugar.

Ingredients

For the cake :

  • 2 spotty bananas

  • 3 large eggs

  • 1/4 cup maple syrup

  • 2 tsp vanilla extract

  • 2 cups almond flour

  • 1/2 cup tapioca flour/starch

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/4 tsp sea salt

    For the chocolate frosting :

  • 3/4 cup full fat coconut milk

  • 1/4 cup coconut sugar

  • 2 tbsp cocoa powder

  • 1/4 tsp vanilla extract

  • Pinch of sea salt

  • Dairy free chocolate chips for sprinkling

Directions

  1. Preheat oven to 350°F and line an 8×8 baking sheet with parchment paper

  2. In a large bowl, mash your bananas. Whisk your eggs, maple syrup, and vanilla in with the bananas until smooth

  3. Stir in your almond flour, tapioca flour, baking soda, baking powder, and sea salt until a smooth batter forms Pour batter into your baking dish, then bake for 30-35 minutes until a toothpick comes out clean

  4. Meanwhile, to make your frosting, whisk together the coconut milk (make sure it is just the thick part), coconut sugar, cocoa powder, vanilla, and salt until as smooth as possible.

  5. Set in the refrigerator to chill until cake is completely cooled

  6. Enjoy!
