Cauliflower & Chicken Coconut Curry

An easy, one-skillet curry that’s ready in 20 minutes and tastes amazing!! It’s hearty yet healthy comfort food that’s layered with Thai-inspired flavors and is naturally gluten-free.

Ingredients

1 teaspoon of olive oil

1 teaspoon of minced ginger

1 carrot chopped

Salt and pepper to taste

2 tablespoons of fresh chives

1 sweet potato chopped

1 teaspoons of curry powder

2 cups of vegetable broth

1/2 cup of lentils

1 large handful of spinach

Directions

  1. Heat a pot over medium heat

  2. Add in olive oil, chopped carrots, sweet potato and ginger

  3. Add in salt and chives and cook for 3 minutes

  4. Stir in curry powder

  5. Add the broth to the pot and raise to get a low boil

  6. Add in lentils and stir to combine the soup

  7. Reduce the heat and cook for 20 minutes until the potatoes are tender

  8. Just before serving add in your greens until they are wilted
