Peanut Butter Chocolate Oat Cups

Crunchy cups with a layer of peanut butter all topped with smooth dark chocolate. These Peanut Butter Chocolate Oat Cups are super delicious and packed with goodness not with processed sugar.

Here’s what you’ll need to make it

  • Rolled oats - Use gluten free if you are allergic to oats

  • Peanut Butter – Or powdered peanut butter. Make sure to use natural peanut butter that is made from only peanuts. For a nut-free alternative, you can also use sunflower seed butter.

  • Maple Syrup – Any liquid sweetener works, such as coconut nectar, simple syrup. While it’s possible to use brown sugar or coconut sugar, it’s better to opt for liquid sweeteners.

  • Sea Salt – Just a pinch for taste.

  • Vanilla – Vanilla extract adds a delicious taste.

  • Dark Chocolate Chips – You can find dairy-free chocolate chips in most shops.

INGREDIENTS

For the oat base
3/4 cup rolled oats
2 tbsp smooth peanut butter
2 tbsp maple syrup
Pinch of salt

For the peanut butter layer
6 tbsp smooth peanut butter
1 tbsp maple syrup

For the topping
1/3 dark chocolate, melted

Directions

  1. Mix all the base ingredients in a bowl, then press into a 6 cup silicon muffin tray. Freeze for 15 minutes.

  2. In the meantime mix the peanut butter and maple syrup in a small bowl to create the middle layer, then spread over the oat bases

  3. Top with the melted chocolate.

  4. Sprinkle with sea salt

  5. Refrigerate until hardened. Enjoy!
