Peanut Butter Chocolate Oat Cups
Here’s what you’ll need to make it
Rolled oats - Use gluten free if you are allergic to oats
Peanut Butter – Or powdered peanut butter. Make sure to use natural peanut butter that is made from only peanuts. For a nut-free alternative, you can also use sunflower seed butter.
Maple Syrup – Any liquid sweetener works, such as coconut nectar, simple syrup. While it’s possible to use brown sugar or coconut sugar, it’s better to opt for liquid sweeteners.
Sea Salt – Just a pinch for taste.
Vanilla – Vanilla extract adds a delicious taste.
Dark Chocolate Chips – You can find dairy-free chocolate chips in most shops.
INGREDIENTS
For the oat base
3/4 cup rolled oats
2 tbsp smooth peanut butter
2 tbsp maple syrup
Pinch of salt
For the peanut butter layer
6 tbsp smooth peanut butter
1 tbsp maple syrup
For the topping
1/3 dark chocolate, melted
Directions
Mix all the base ingredients in a bowl, then press into a 6 cup silicon muffin tray. Freeze for 15 minutes.
In the meantime mix the peanut butter and maple syrup in a small bowl to create the middle layer, then spread over the oat bases
Top with the melted chocolate.
Sprinkle with sea salt
Refrigerate until hardened. Enjoy!
