Pumpkin Protein Cookie Dough

This pumpkin protein cookie dough is my new favorite easy to make fall treat! I will take any excuse to eat cookie dough especially if I can get some extra protein in too.

Ingredients

1/4 cup Greek yogurt

1/4 cup pumpkin puree

1/2 cup almond flour

2 scoops vanilla protein powder

2 tsp coconut sugar

1/4 cup peanut butter or other nut/seed butter

2 teaspoon pure vanilla extract or vanilla bean paste

Pinch of salt & pumpkin spice

Dark chocolate chips to taste

Instructions

In a large bowl add yogurt, pumpkin puree, peanut butter, sugar.

Fold in your flour, protein powder, and salt. Then fold in your chocolate chips.

Place in the fridge or freezer to set, then store in fridge for up to 5 days!
