Coconut Oat Balls
Here’s what you’ll need to make these coconut oat balls (makes about 14 depending on size) :
Peanut Butter or Almond butter! This will be your binding ingredient, also a great source of healthy fats
Maple Syrup – For a touch of sweetness
Oats - the perfect complex carb, you can use rolled oats or quick oats!
Unsweetened coconut flakes - the best part of these oat balls is the strong coconut flavor
Chia seeds - adds some extra fiber ( yay! gut health!)
Cinnamon/Vanilla/Sea Salt - adds in some extra flavor!
Dark chocolate - (optional)
Ingredients
1/3 cup of peanut butter or another nut butter
1/3 cup of unsweetened coconut flakes
1 cup of oats
1/4 cup of maple syrup
1 teaspoon of vanilla extract. salt & cinnamon
2 tablespoons of chia seeds
Instructions
1. In a mixing bowl add in peanut butter, maple syrup and vanilla and mix together
2. Stir wet ingredients until combined
3. Add in oats, coconut, chia seeds, cinnamon and salt
4. Mix until combined
5. Pinch off a tablespoon ball using a spoon or cookie scoop
6. Roll into a ball then continue with the rest of the mixture
7. Store in an airtight container for 1 week in the fridge or up to 3 months in the freezer
